整串葡萄壓榨，使用原生酵母在不鏽鋼槽中發酵，老橡木桶中陳釀3至6個月，必要時會進行澄清與過濾。

釀造：採收後依酒款與年份特性，部分除梗，進行4~7天的冷浸泡，導入水泥槽，透過原生酵母進行不控溫的發酵，期間以溫和的踩皮以萃取更多的顏色與酚類物質。之後換到小橡木桶進行培養。新桶比例通常村莊級為30%，一級園與特級園則為70%以上。
