釀造：手工採收後，含梗比例依各個年份與地跨差異很大，實際上必須等到實際採收前，才會做出判斷，有時僅保留25%，有時甚至高達100%的整串發酵。培養時新桶的使用比例，特級園80%~100%，一級園50%，村莊級20%，控制在不干預風土的純淨，同時幫助酒質較易展現其柔和的面貌。
