We add a touch of balsamic vinegar to perfectly balance the acidity. Cream is what separates a soup from a bisque, and we chose a splash of cashew cream to keep it vegan. Just fyi, we used to make a dairy version but couldn't tell the difference. Who knew?! Add a grilled cheese sandwich (or even a toasted roll), close your eyes, and you're in
