With a low yielding training system and soils rich in clay and limestone, the wine achieves a remarkable body, texture, and minerality. Harvested by hand from 7 year old vines at 230 meters above sea level, the grapes undergo a spontaneous 30 day fermentation. Post fermentation, Collemurello ages in
