The trout are fed a sustainable, nutrient rich diet (goals!). AND our rainbow trout has 62x less mercury than the FDAs allowable standard. The trout is brined in extra virgin olive oil, salt, garlic, and brown sugar, and smoked in small batches over alder wood, hand packed, and canned by a family owned cannery on the
